Easter is around the corner and I am excited! Not because of any religious meaning, but because there will be lamb. There has to be lamb, and I will take any excuse for cooking a proper lamb roast! This roast is so easy, you can barely call it cooking: cut some veggies, season the meat and put it into the oven. Then you wait. It’s called slowfood for a reason. Ahh, it’s thursday and it’s time to plan your sunday roast! This time I suggest a nice pork belly roast (if your macros allow for it 😉 ). Veggies roasting underneath a beautiful piece of meat, sucking up all those flavours … that’s a meal for kings. And a nice crackling, so crunchy that you hear someone eating it even when you are in another room. What you need for this? Just a little time and some humble ingredients!

Solving the dilemma of hot summer days and the need for a perfect roast.
I love my sunday roast! I go to the butcher and let him select a nice cut of meat for me and on my way home I plan how I’m going to cook it. A few simple sides to go with it. Most of the time this will be roasted vegetables, since I am addicted to their simplicity and deliciousness. But in the summer times my enthusiasm for sunday roast comes to a halt: it is hot outside and the last thing I want to do is adding heat by roasting something for hours in the oven. But I have found a solution and you will love it!
