Datterini And Yoghurt Nice Cream

Creamy, refreshing and macro friendly.

Summer is my least favourite season, yet it still has it’s perks, one of them being perfectly ripe and sweet tomatoes. They are so delicious that I somehow got the urge to turn them to an ice cream. Yet another experiment that worked out way better than I thought! Oh, and the macros are insane. Thank me later.

Breakfast Stew

A comforting way to start strong.

I prefer having a hot breakfast over anything else. Yes, even during summer. Somehow it is comforting, a gentle start for a new day. Like a nice warm-up for a training session, breakfast should prepare you for the upcoming day and provide energy until lunch. This recipe will do exactly that: it sets you up for an awesome day. Enjoy!

Chicken Tray Bake

Juicy, tender chicken and delicious roasted veggies.

So, I heard you don’t have much time for cooking. No problem, I’ve got you covered! There aren’t a lot of recipes that allow you to prepare a mountain of protein while at the same time cooking up a healthy side dish (only stews are nearly as efficient). We combine chicken thighs with tasty veggies, bold spices and refreshing citrus fruits. The reward is crispy chicken skin, tender meat and delicious veggies for days.

Easy Roast Duck

Complete with a wonderful side dish.

Roasted duck is a true delicacy. A deep, warming flavour, fat and delicious, easier to prepare than most believe it to be. Not exactly a classic diet food, more a treat and comfort food. But it’s exactly the type of food for a cold, stormy winter evening like today. Also I was able to grab a top quality bird at my local supermarket, a feat already worth a celebration in itself. Let’s get started!

Warming Beef Stew

Easy, comforting and delicious soulfood.

As the weather transitions from mild autumn to cold and rainy winter, I feel the need for something heart warming to eat. A bowl to hug. Where it is difficult to wait for it and you inevitably burn your tongue on the first spoonful. Thankfully this recipe is so simple and flexible, you can easily remember it, change it to your liking and make it your own.

The Sunday Roast: Pork Belly

A crunchy, fatty, comforting treat

Are you ready to plan your sunday roast? This time I suggest a nice pork belly roast (if your macros allow for it 😉 ). Veggies roasting underneath a beautiful piece of meat, sucking up all those flavours … that’s a meal for kings. And a nice crackling, so crunchy that you hear someone eating it even when you are in another room. What you need for this? Just a little time and some humble ingredients!

Breakfast Pulled Beef

Easy peasy meal prep for even the most stressed cooks.

As temperatures get a little lower (which I am extremely happy about), and autumn peeking around the corner, I am in the mood for something different for breakfast. Something warming, comforting and hearty, keeping me satieted many hours. I like my easy cheesecake, but now I’m not cutting anymore and can afford to eat something different. However, even if you are cutting at the moment, this recipe could be for you: you just have to be smart about the cut of meat to use.

Sunday Roast: Summer Edition

Solving the dilemma of hot summer days and the need for a perfect roast.

I love my sunday roast! I go to the butcher and let him select a nice cut of meat for me and on my way home I plan how I’m going to cook it. A few simple sides to go with it. Most of the time this will be roasted vegetables, since I am addicted to their simplicity and deliciousness. But in the summer times my enthusiasm for sunday roast comes to a halt: it is hot outside and the last thing I want to do is adding heat by roasting something for hours in the oven. But I have found a solution and you will love it!
