Mighty Massaman Curry

A mild, yet exciting curry of unusual origin.

Many people are afraid a curry is too hot for them and therefore dislike Indian cuisine. However, this massaman curry is comforting mild, but still excitingly fragrant and not at all boring. Indian spices collide with Thai ingredients, giving birth to a very special dish. Comforting, yet interesting. The kind of food that makes you a little sad once you ate the last portion. And the best of all, it’s really easy to make and can be prepared in large batches. Enjoy!

Caramelised Pears And Radicchio

The perfect way to fall in love with bitterness again.

Most of us aren’t used to the bitter notes some vegetables like radicchio bring to the table. In a world full of sweet or salty treats, bitterness has been abandoned. Using a little kitchen magic, we take the edges off the bitterness and transform it into a crowd-pleasing side dish that goes with pretty much any meat or even fish. An Italian classic with a little Asian twist. Give it a try!

A Really Easy Festive Roast

Cooking up a festive dinner never has been easier.

We’ve made a festive bird roast by accident. Almost a full-scale Thanksgiving dinner. How is it possible to accidentally cook a feast? Well, it all starts with me finding a very special bird perfect for roasting. Then I watch an episode of Jamie Oliver’s Christmas feasts, get inspired, improvise a little and boom, here we are. Even though there are many components, everything is child’s play to prepare. And the result is worth the effort ten times. Give it a try!

Lingua In Agrodolce

Eating nose to tail for beginners.

Eating innards is daunting for most of us. This is a way to get started with it, as tongue has a mild taste, isn’t really offal and just works great in this typical Italian recipe directly from Rome. Come on, try it out, you will be pleasantly surprised!

Beef Curry Vindaloo

Indian spices meet a Portugese twist.

Nothing beats a nice curry if you ask me. I remember the first time when I read a recipe of the Vindaloo curry, thinking “wow, that’s strange!” It packs an interesting punch in the form of vinegar, which was introduced to India when Portugal used to have colonies in the land of spices. The Portuguese seem to love their vinegar and they used it to remind them of home and as a natural way to preserve goods in a time long before anything like a refrigerator. I am glad about this fusion, as it makes for a delicious curry you definitely should give a try!

Chinese Sweet And Sour Chicken

With fermented black beans for an umami laden twist.

I think the Chinese sweet and sour chicken we know is as Chinese as chicken tikka masala is Indian: not at all! Despite its lack of authenticity, it’s still a delicious dish. I added a special ingredient to make things more interesting and nudge it a little more back to China.

Chilli Con Carne

Childhood memories and cowboys.

A really good chilli con carne is a comforting soul food that I can enjoy the whole year. Comforting, but not boring, as I feel a proper chilli con carne needs to be on the edge of being almost too hot. The slightly painful tingle in your mouth is what really elevates this dish from an ordinary stew to something special. Get yourself a spoon and some handkerchiefs to wipe away the sweat and let’s dig in!

A Lazy Bear’s Curry

Tasty meal preping for dummies.

One of the most common excuses I hear as coach is that people are too busy, especially when it comes to cooking. Nobody seems to have time for it. I see and understand the point: not everyone is a foodie like us who likes spending time in the kitchen. But you do not need too: it can be so easy! This curry takes about 15 minutes to prepare and you can scale it up for as many hangry bears you need to feed. No excuses of not having time for that!
